The Surf N Sand Resort in Laguna Beach is not only one of our amazing Toes on the Nose retailers, but also a great spot to grab dinner and drinks. Last weekend we went down to Splash's restaurant which is on the sand level of the resort. When the bar tender asked me what I wanted, I asked him to surprise me. He then handed me a beautifully garnished ice cold cocktail, and after my first sip I was hooked! What hit my lips was a perfectly crafted Pineapple Mojito. He was kind enough to share with me the recipe and it's too good not to share with you, so.... You're welcome ;)



  • 1/2 Lime, juice from
  • 10 Mint, leaves
  • 1/2 cup Pineapple
  • 1 Wedges of pineapple and mint, leaves

Baking & Spices

  • 2 tsp Sugar


  • 1 Club soda

Beer, Wine & Liquor

  • 4 oz Rum, white

Pineapple Mojito 1/2 cup pineapple, finely chopped 10 mint leaves 2 teaspoons sugar (or more depending on the sweetness of the pineapple) 4 ounces white rum juice from 1/2 lime club soda for serving wedges of pineapple and mint leaves for garnish
